Ốc ngựa xào bơ tuy là món ốc xào bình thường nhưng rất hấp dẫn bởi thịt ốc dai, ngọt, dễ ngấm vị, ... Bên cạnh đó, nước xào cũng rất tinh tế bởi vị béo thơm của bơ, cay cay của ớt, hứa hẹn mà món ăn chơi suýt xoa cho cả nhà trong những dịp cuối tuần.
Ốc ngựa ngâm nước gạo hoặc nước muối cho ốc hết bùn cát, rửa lại nhiều lần bằng nước sạch rồi để ráo. Sau đó, cho ốc vào nồi luộc vừa chín tới rồi vớt ốc ra để ráo nước.
Xào thơm tỏi và ớt băm với 2 muỗng canh dầu ăn, cho ốc vào đảo đều. Sau đó thêm 45g bơ vào, đảo đều cho bơ tan chảy ngấm đều vào ốc là được.
