Trong tô nhỏ trộn đều 2 muỗng canh nước mắm, 2 muỗng canh đường, 4 muỗng canh nước, ớt và tỏi băm. Sườn sụn rửa sạch, băm nhỏ. Riềng, sả, tỏi, tiêu và ớt cho vào cối giã nhuyễn.
Đặt chảo lên bếp, cho vào 2 muỗng canh dầu, chờ dầu hơi nóng cho sụn heo vào xào tơi. Sau đó cho nguyên liệu giã nhuyễn vào xào thơm 4-5 phút. Cuối cùng, cho tô nước mắm mặn ngọt vào đảo đều, đậy nấp vung, rim nhỏ lửa cho đến khi khô ráo.
